PINEAPPLE RECIPE ROUNDUP
From pineapple guac to dairy-free pineapple ice cream, enjoy these healthy, refreshing and easy-to-make pineapple recipes. Pineapple Guacamole 3 Avocados, ripe 1/4 cup Cilantro, fresh leaves 1 Jalapeno 1 1/2 cups Pineapple, fresh 1/2 cup Red onion 1 tbsp Lime juice, fresh 1/2 tsp Sea salt, coarse 1/4 cup diced tomato Throw all the ingredients in a bowl and mash everything together with a fork to your desired level of chunky-ness. (We like ours pretty chunky!) Don’t be afraid to mash up the pineapple a bit too, so that the juices infuse the guac.
